炒米粉 (English version)

Fried Rice Noodle

Ingredients:

Rice Noodle (or Rice Vermicelli) 1pk

Shallot 1-2 clove

Dry shrimp 1 spoonful (optional)

Shiitake mushroom 6-8 pieces

Carrot 1

Cabbage some

Ground Pork 1/2 cup

Chicken stock 1/2-1cup (I use can)

Scallion and bean sprout (optional)

Seasoning:

Soy sauce, salt, oyster sauce, white pepper, sugar

Prepare:

1. Soak the shiitake mushroom (and dry shrimp) in water, until it’s soaked and soft

2. Put rice noodle in water, until soft

3. Marinate the ground pork with some soy sauce (1/2 tablespoon), salt (1/2 teaspoon), rice wine (1/2 teaspoon), and sugar (1/2 teaspoon)

4. Cut the Shiitake mushroom into strips (keep the soaking water), and cut carrot & cabbage into the same size

To make the fried rice noodle:

1. Use 1 tablespoon of oil, start frying with the shallot, until it’s fried (or until you can smell the fragrance)

2. Add in shiitake mushroom, fried for 1 min

3. Add in the ground pork, fried until the meat is about 3/4 done

4. Add in the carrot and cabbage, keep on frying for another 2-3 mins

5. Pour in the chicken stock, soaking water from the mushroom, cook until it boils

6. Seasoning the boiling ingredients with soy sauce (about 1&1/2 tablespoon), Salt (1 teaspoon), oyster sauce (1 table spoon), and white pepper (1 teaspoon)

7. Keep it boil until most the ingredients are cooked and well mixed (but make sure you don’t dry up the soup! You’ll need to keep enough soup/stock, because the rice noodle will soak up all the soup after you add it in.)

8. Pour in the rice noodle, mixed the noodle with the cooked ingredients

9. If you have bean sprout and scallion, add them in at this time

10. Turn down the fire to medium/small, mix all the ingredients together. And the rice noodle with gradually soak up the soup
